# What You’ll Need:

→ Dry Spices

01 - 2 tablespoons nutritional yeast flakes
02 - 1 tablespoon garlic powder
03 - 1 tablespoon onion powder
04 - 1½ teaspoons dried thyme
05 - 1½ teaspoons dried sage
06 - 1 teaspoon smoked paprika
07 - 1 teaspoon ground turmeric
08 - 1 teaspoon dried parsley
09 - 1 teaspoon celery salt
10 - ½ teaspoon ground black pepper
11 - ½ teaspoon dried rosemary, crushed
12 - ½ teaspoon ground white pepper
13 - ¼ teaspoon ground coriander
14 - ¼ teaspoon ground marjoram
15 - ¼ teaspoon ground mustard

# How to Make It:

01 - In a small mixing bowl, add the nutritional yeast flakes, garlic powder, onion powder, dried thyme, dried sage, smoked paprika, ground turmeric, dried parsley, celery salt, black pepper, crushed rosemary, white pepper, coriander, marjoram, and ground mustard.
02 - Stir thoroughly with a whisk or spoon until all spices and herbs are uniformly distributed throughout the mixture.
03 - Transfer the blended seasoning to an airtight container and store in a cool, dark place for up to 6 months to preserve maximum flavor potency.
04 - Sprinkle generously over plant-based proteins such as tofu, tempeh, or seitan and massage the seasoning in before grilling or roasting.
05 - Combine 1 to 2 tablespoons of the seasoning with ¼ cup olive oil and 2 tablespoons fresh lemon juice. Coat desired ingredients and marinate for at least 30 minutes before cooking.
06 - Stir 1 tablespoon of seasoning into every 2 cups of hot water. Adjust the amount to taste depending on the desired broth intensity.

# Expert Tips:

01 -
  • It takes five minutes from thinking about it to having a jar that transforms plain tofu into something you actually crave.
  • You probably already own most of these spices, and the ones you are missing cost less than a takeout order.
02 -
  • Crushing the rosemary between your fingers before adding it makes a massive difference, because whole needles stay woody and refuse to distribute evenly.
  • Nutritional yeast settles and clumps more than any other ingredient, so always remix the stored blend briefly before each use.
03 -
  • Toast the blend in a dry skillet for thirty seconds before using it as a rub, and the aromatics will bloom into something extraordinary.
  • Grinding the thyme and sage between your palms as you add them releases oils that a pre ground version simply cannot match.
