→ Sweet Potato Fries

18 - 2 large sweet potatoes (about 1.3 lb), peeled and cut into ½-inch thick fries
19 - 2 tbsp olive oil
20 - 1 tsp smoked paprika
21 - ½ tsp garlic powder
22 - ½ tsp salt
23 - ¼ tsp black pepper

# How to Make It:

01 - Preheat the oven to 425°F. Line a baking sheet with parchment paper. In a large bowl, toss the sweet potato fries with olive oil, smoked paprika, garlic powder, salt, and black pepper. Spread them evenly on the baking sheet.
02 - Bake for 25–30 minutes, turning halfway through, until fries are golden and crisp at the edges.
03 - In a large bowl, combine ground turkey, chopped onion, minced garlic, egg, breadcrumbs, Dijon mustard, parsley, Worcestershire sauce, salt, and black pepper. Mix gently until combined, avoiding overworking the mixture.
04 - Shape the mixture into four equal-sized patties.
05 - Heat olive oil in a large skillet or grill pan over medium heat. Cook patties for 5 to 6 minutes per side until browned and fully cooked (internal temperature 165°F).
06 - Lightly toast the whole wheat buns if desired.
07 - Place a lettuce leaf on each bottom bun. Top with a turkey patty, tomato slice, red onion, pickles if using, and your choice of sauce. Cover with the top bun.
08 - Serve immediately alongside the hot sweet potato fries.

# Expert Tips:

01 -
  • Turkey stays surprisingly moist and flavorful when you don't fuss with it too much—the secret is in the mustard and Worcestershire.
  • Sweet potato fries baked alongside mean one oven, less cleanup, and the whole dinner ready in under an hour.
  • It's the kind of meal that feels indulgent but doesn't weigh you down, perfect for those nights when you want satisfaction without the guilt.
02 -
  • Don't skip the water soak for the sweet potatoes if you want truly crispy fries—it removes surface starch and changes the texture completely, and yes, the difference is worth the extra 30 minutes of waiting.
  • Turkey continues cooking slightly after you remove it from heat, so pull it off when it hits 74°C internally; any hotter and it dries out fast.
03 -
  • Make the patties a few hours ahead and refrigerate them; cold turkey holds together better on the heat, and you'll get a better crust.
  • If you're cooking for a crowd, use a grill instead of a skillet—it's faster and keeps the house cooler on a warm day.
