01 - In a medium bowl, whisk together chia seeds, coconut milk, maple syrup, and vanilla extract. Stir vigorously to prevent clumping. Cover and refrigerate for at least 2 hours or overnight until thickened to a pudding-like consistency.
02 - In a blender, combine the diced mango, lime juice, and maple syrup if using. Blend until completely smooth and set aside.
03 - Rinse the blender and combine dragon fruit, lime juice, and maple syrup if using. Blend until completely smooth and set aside.
04 - Once the chia pudding is set, assemble in serving glasses: spoon a layer of chia pudding into the bottom of each glass. Add a layer of mango puree, followed by another layer of chia pudding, and finish with dragon fruit puree on top.
05 - Garnish with fresh mint leaves, chopped nuts, or toasted coconut flakes as desired. Serve immediately or refrigerate until ready to serve.
