Homemade Strawberry Gummies (Printer-friendly)

Naturally chewy fruit gummies made with fresh strawberries, honey, and gelatin for a wholesome homemade treat.

# What You’ll Need:

→ Fruit Base

01 - 1.5 cups fresh strawberries, hulled and halved
02 - 2-3 tablespoons honey or maple syrup
03 - 2 tablespoons fresh lemon juice

→ Gelatin Mixture

04 - 3 tablespoons unflavored gelatin powder
05 - 0.5 cup cold water

# How to Make It:

01 - Combine strawberries and lemon juice in blender or food processor. Blend until completely smooth and no fruit chunks remain.
02 - Transfer puree to small saucepan. Add honey or maple syrup and stir thoroughly to incorporate evenly.
03 - Sprinkle gelatin powder over cold water in separate small bowl. Let stand for 3-5 minutes until mixture thickens and absorbs liquid completely.
04 - Heat strawberry mixture over medium-low heat for 2-3 minutes until just warmed through. Do not boil or overheat.
05 - Add bloomed gelatin to warm strawberry mixture. Whisk constantly for approximately 2 minutes until gelatin dissolves completely and mixture becomes smooth.
06 - Remove from heat. Carefully pour mixture into silicone gummy molds or parchment-lined small baking dish, avoiding bubbles.
07 - Refrigerate for minimum 2 hours or until completely firm and set throughout.
08 - Remove gummies from molds or cut into bite-size pieces if using baking dish. Store in airtight container in refrigerator up to 1 week.

# Expert Tips:

01 -
  • These capture real strawberry flavor instead of artificial candy taste
  • The texture is perfectly chewy without being rubbery or tough
02 -
  • Boiling the gelatin mixture can break down its setting power
  • The blooming step is what prevents grainy texture in the final gummies
03 -
  • Strain the puree through a fine mesh sieve for absolutely smooth gummies
  • Work quickly once the gelatin is dissolved, as it starts setting faster than you expect
