01 - Combine strawberries and lemon juice in blender or food processor. Blend until completely smooth and no fruit chunks remain.
02 - Transfer puree to small saucepan. Add honey or maple syrup and stir thoroughly to incorporate evenly.
03 - Sprinkle gelatin powder over cold water in separate small bowl. Let stand for 3-5 minutes until mixture thickens and absorbs liquid completely.
04 - Heat strawberry mixture over medium-low heat for 2-3 minutes until just warmed through. Do not boil or overheat.
05 - Add bloomed gelatin to warm strawberry mixture. Whisk constantly for approximately 2 minutes until gelatin dissolves completely and mixture becomes smooth.
06 - Remove from heat. Carefully pour mixture into silicone gummy molds or parchment-lined small baking dish, avoiding bubbles.
07 - Refrigerate for minimum 2 hours or until completely firm and set throughout.
08 - Remove gummies from molds or cut into bite-size pieces if using baking dish. Store in airtight container in refrigerator up to 1 week.
