- Line a baking sheet with parchment paper to prevent sticking.
- In a medium mixing bowl, blend Greek yogurt, diced strawberries, honey or maple syrup, and vanilla extract until the strawberries are evenly distributed throughout the mixture.
- Spoon heaping tablespoon-sized portions of the mixture onto the prepared baking sheet, shaping approximately 16 clusters.
- Place the baking sheet in the freezer and allow clusters to freeze for 45 minutes until firm.
- In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring between each until smooth and fully combined.
- Using forks, dip each frozen yogurt cluster into the melted chocolate, coating completely. Allow excess chocolate to drip off before returning the cluster to the baking sheet.
- Return the chocolate-coated clusters to the freezer for at least 15 minutes to let the chocolate solidify.
- Enjoy clusters frozen or allow to sit at room temperature for 5 minutes before serving.
