01 - Line a baking sheet with parchment paper for easy cleanup and setting.
02 - Insert a lollipop stick or skewer into the center of each marshmallow, if making pops.
03 - In a heatproof bowl, combine chocolate and coconut oil if using. Melt over a saucepan of simmering water (double boiler method) or microwave in 20-second bursts, stirring until completely smooth.
04 - Hold each marshmallow by the stick (or directly) and dip halfway into melted chocolate. Gently tap to let excess chocolate drip off.
05 - Immediately sprinkle with chosen toppings or roll the chocolate-coated portion in toppings while chocolate is still wet.
06 - Place coated marshmallows on prepared baking sheet. Allow chocolate to set at room temperature for 30 minutes, or refrigerate for faster setting.
07 - Serve immediately or package for gifting. Store in an airtight container at cool room temperature or refrigerate.
