# How to Make It:

01 - Combine shrimp, crab meat, cream cheese, mozzarella, cheddar, spring onions, red bell pepper, garlic, parsley, lemon zest, smoked paprika, salt, and black pepper in a large bowl. Mix until thoroughly incorporated and uniform.
02 - Place 2–3 tablespoons of filling in center of each tortilla. Gather edges upward and twist gently to create sealed parcel. Secure with toothpick if necessary. Repeat until all tortillas and filling are used.
03 - Pour vegetable oil ½–¾ inch deep into heavy skillet. Warm over medium heat until oil shimmers but does not smoke.
04 - Fry tortilla bombs in batches, starting seam-side down. Cook 2–3 minutes per side until golden brown and crisp throughout. Transfer to paper towels to drain excess oil.
05 - Serve immediately while hot, garnished with additional parsley and lemon wedges if preferred.

# Expert Tips:

01 -
  • The way the cheese pulls when you bite into that crispy shell is absolutely ridiculous
  • They disappear faster than you can fry them, so you might want to double the batch
02 -
  • If your oil is too hot, the outside will burn before the cheese inside melts completely
  • Let the filling sit for five minutes before wrapping, it firms up slightly and is easier to work with
03 -
  • Keep the finished bombs in a 200°C oven while you finish the batches so everyone eats them hot
  • Set up a little assembly line with bowls of filling, a stack of tortillas, and a plate for wrapped bombs
